Kale is a very nutritious leaf veggie that tastes great in stir fries, salads, and even green smoothies. I like to make peanut butter rolls – just spread some nut butter on a leaf, add goodies like rice, shredded carrots, or chopped onions, and roll ’em up!
Kale is very high in vitamin K and also is a good source of Vitamins A, C, B6, E, folate, manganese, as well as thiamin, riboflavin, pantothenic acid, iron, calcium, potassium, and phosphate.
