We grow both curly green kale and dino kale (also called lacinato).

Green kale has more of a bite and works well for cooking (like kale chips) or tossing into soups. Dino kale is darker, flatter, and more tender. It’s good in a smoothie, or a in nice raw salad with some lemon and olive oil (like a cole-slaw type salad).

Kale does great in our garden—comes up strong and keeps going for a good while. You can use it cooked or raw, and it’s full of vitamins A, C, K, and others.

Cooking ideas: sauté it with garlic, throw it in a soup or stir-fry, or bake it into kale chips. For dino kale, a quick massage with salt and oil makes it nice and soft for salads.
